Caramelized Onion Dip

A luscious, creamy onion dip that’s great with vegetables, and whole grain crackers.


3 cups sliced yellow onions, preferably organic
2 tbs organic coconut oil
2 tbs organic butter
1/4 tsp cayenne pepper
1 tsp sea salt
4 oz organic cream cheese, softened
1/2 cup organic sour cream
1/4 cup Vegenaise

Wash and peel about 3 large onions. Cut in quarters. Using the slicing blade, slice the onion quarters in the food processor. Heat coconut oil and butter at medium heat in large skillet or dutch oven. Add onions, cayenne pepper, and salt and saute for about 10 minutes, stirring occasionally. Reduce the heat to low and continue cooking the onions for 30 to 40 more minutes, stirring occasionally, until the onions are brown and caramelized. Allow the onions to cool. In a large bowl combine the softened cream cheese, sour cream, and Vegenaise. Whisk or mix until smooth. Add the onions and mix well. Refrigerate the dip overnight of for several hours for flavors to blend before serving. Serve at room temperature with vegetables and/or whole grain crackers or pita chips. Adjust seasonings to taste before serving.
