Cashew Curry Dip

A different but tasty spread for fresh apple or pear slices.

Ingredients

1/2 cup organic cottage cheese*
1/2 cup organic cream cheese, softened*
1/2 cup raw cashews, lightly toasted *
1 tsp curry powder
2 tbs honey, preferably raw
2 tsp fresh lemon juice

No of Servings: 8     Preparation Time: 15 minutes

Instructions

Place cottage cheese, softened cream cheese, curry powder, honey and lemon juice into food processor bowl. Process until mixture is combined. Add toasted cashews and pulse mixture until desired consistency. It can either be totally smooth or some of the cashews pieces can remain to give substance to the dip. Serve in a pretty bowl with fresh apple or pear slices.

Notes

Don’t use low-fat or non-fat cottage cheese or cream cheese. To toast cashews, place in dry skillet on top of stove on medium heat until lightly browned, stirring often for about 5 minutes. Or place cashews in stainless steel or glass pan at 350 degrees in the oven for about 10 minutes, stirring occasionally until nuts are lightly browned.
