Chocolate Heart Cake

A special occasion cake that I bake in heart shaped pans for Valentines Day. Feel free to use round layer pans or a 13 inch by 9 inch baking pan.


4 tbs organic coconut oil, softened
1/2 cup organic butter, softened
1/2 cup Sucanat
1/2 cup pure maple syrup
2 eggs
1 tsp vanilla extract
2 cups spelt flour
1/2 cup organic cocoa or carob powder
1/2 tsp sea salt
1/2 tsp baking soda
1 tsp baking powder
1 cup organic whole milk yogurt
7 Minute Frosting
2 egg whites
1/2 cup pure maple syrup
1/2 cup Sucanat
1/4 cup water
1 tsp vanilla extract

No of Servings: 8     Preparation Time: 60 minutes     Cooking Time: 40 minutes


Preheat oven to 350 degrees. Grease 2 heart-shaped cake pans. (I use coconut oil.) Dust pans using cocoa powder instead of flour. In mixing bowl, cream together softened coconut oil, softened butter, Sucanat and maple syrup until light and fluffy. Add eggs, one at a time beating after each addition. Beat in vanilla. Stir dry ingredients together (cocoa powder, flour, salt, baking soda and baking powder). Gradually mix in dry ingredients alternately with yogurt, beating after each addition until batter is smooth. Pour batter into pans. Bake for 30 to 35 minutes or until cake tester (or wooden pick) inserted in center comes out clean. Remove from oven and place pans on wire rack to cool. When cool, frost with 7 Minute Frosting. To make frosting, place egg whites, maple syrup, Sucanat and water in the top pan of a double boiler. Beat on high for 1 minute with electric mixer. Place over boiling water (water should not touch bottom of pan); beat on high speed for 7 minutes. Remove pan from boiling water. Add vanilla and beat 2 minutes longer. Frosting will be a light beige instead of white. Place 1 cake layer on plate or cake stand. Frost top and sides of layer. Carefully place 2nd layer on top. Frost top and side of cake. Decorate with fresh flowers or fresh raspberries.


If you don’t have heart-shaped pans you can pour the batter into one 9 inch square pan and one 9 inch round pan. After cake has baked and cooled, place square cake on a plate with one corner at the top. Cut the round cake layer in half. Place each round half on the sides of the square cake to form a heart. (Cake will be a single layer instead of a double layer cake.)
