Cranberry Tea

An easy, festive hot beverage, nice for the holidays.


4 cups or 1 lb fresh cranberries, preferably organic
2 quarts filtered water
juice from 2 oranges (about 1 cup)
juice from 2 lemons (about 1/2 cup)
3/4 cup honey
1/4 cup Sucanat
4 tbs cranberry juice concentrate*
4 cinnamon sticks
6 whole cloves

No of Servings: 10     Preparation Time: 20 minutes


Sort and wash cranberries. Rinse and place in large pan with water. Bring to a boil and simmer for about 25 minutes until berries pop. Carefully strain mixture. Don’t press berries or tea will be bitter. Place liquid into crockpot. Discard berries. Juice the oranges and lemons and add to crockpot. Add honey and Sucanat and stir until combined. Stir in cranberry concentrate, cinnamon sticks and cloves. Allow to simmer in crockpot for about 4 hours. Can be kept warm for hours. Serve in pretty cups or mugs with fresh cinnamon sticks as stirrers if desired.


Cranberry concentrate can be found in the natural food section of the grocery store. It usually comes in a small glass bottle and contains nothing but cranberry juice in a concentrated form. It gives the tea an added cranberry flavor.
