Easy Cauliflower Soup

An easy, creamy soup for a cold winter evening.

Ingredients

2 tbs organic coconut oil
1 large onion, chopped
1 clove garlic, minced
1 head of organic cauliflower
2 cups organic chicken broth
1 cup organic coconut milk
1 tsp curry powder
1/2 tsp tarragon
1/4 tsp nutmeg
1/4 tsp cayenne pepper
1/2 to 1 tsp Herbamare
2 tbs butter

Instructions

Heat coconut oil in large soup pan or stock pot. Sauté onion in oil until soft. Add minced garlic to onion. Sauté briefly. Wash and break or cut up cauliflower into bite size pieces. Add to onions and garlic. Add chicken broth. Bring mixture to a gentle boil and then simmer for about 10 minutes until caulifower is soft.

Place the coconut milk into blender container. Carefully ladle soup ingredients into blender, saving about 1 cup of mixture in the pan. Add seasonings and Herbamare to blender container. Carefully place lid on blender and cover with a pot holder. Blend until smooth. Pour mixture back into pan and reheat as needed. Can add more coconut milk if thinner consistency is desired. Add butter and stir until melted. Taste and adjust seasonings if desired. Serve in pretty bowls and garnish with chives. Serve with a tossed green salad and whole grain crackers for an easy, healthy supper.

Notes

Herbamare is an herbal seasoning containing sea salt and various herbs. It can be found in health food sections of the grocery store with other cooking herbs and spices.
