Easy Skillet Supper

A simple one skillet meal similar to chili.

Ingredients

1 lb. organic ground beef or ground turkey
1 medium onion, chopped
1 red pepper, chopped
2 garlic cloves, minced
1 16 oz. jar organic salsa
1 15 oz. can organic pinto or black beans, undrained
1 4 oz. can diced green chiles
1 14 oz. can organic diced tomatoes
1 cup organic frozen corn (optional)

No of Servings: 6     Preparation Time: 30 minutes

Instructions

Brown meat in a large skillet. Add onion, pepper and garlic and sauté until soft. Add remaining ingredients and bring to simmer. Simmer for ten to fifteen minutes until hot and bubbly. Serve with sour cream, scallions and black olives if desired. Add a green salad to round out the meal.

Notes

I use organically grown ingredients. They not only have more taste and flavor but the nutrient value is much higher in organically grown foods. However, if you can’t locate them…or just aren’t there yet, use whatever you have available.
