Fantastic Fruit Soup

A pretty, refreshing soup that can be enjoyed all year long. For a summer version, replace pears with either 2 to 3 fresh peaches or 2 cups cubed cantaloupe. Omit orange juice.

Ingredients

2 ripe pears (about 2 cups cored and quartered)
2 cups blueberries (fresh or frozen)
1 cup organic apple juice
1 tbs lemon juice
1/4 cup honey
juice of 1 orange
1/2 tsp. cinnamon
organic vanilla yogurt

No of Servings: 4     Preparation Time: 25 minutes

Instructions

Blend all ingredients until smooth in blender. Serve in pretty, individual, chilled bowls. Drizzle organic vanilla yogurt on top in a swirly design. Garnish with mint leaves.

Notes

I use organically grown fruit and juice. I recommend organic whole milk yogurt. Stonyfield, Seven Star, Horizon or Brown Cow are acceptable brands.
