French Onion Soup

An easy version of an all-time favorite. Great as a beginning course for a nice dinner or hearty enough for a main course served with a fresh green salad.


2 tbs coconut oil
2 tbs butter
8 cups organic yellow onions, sliced
2 cloves, garlic, minced
2 tsp organic, unsulphured molasses
3 tbs organic Tamari
1 tbs spelt flour
pinch cayenne pepper
1, 32 oz carton organic chicken broth
1 bay leaf
4 halves sourdough spelt bread
1 cup Gruyere cheese or cheese of preference

No of Servings: 4     Preparation Time: 30 minutes     Cooking Time: 60 minutes


Melt butter and coconut oil in large pan or Dutch oven. Add onions and garlic and saute over low to medium heat until soft and caramelized for about 30 minutes, stirring often. Stir in molasses, flour, Tamari, and cayenne. Simmer and stir for about 5 minutes. Then add chicken broth and bay leaf. Bring to low boil and then simmer for 20 more minutes. Remove bay leaf. Place soup in individual soup bowls or crocks. Toast 2 pieces of bread and cut in half. Place 1/2 piece of toast in each bowl. Top with grated cheese. Place bowls on baking sheet. Place baking sheet under broiler and broil until cheese is melted and lightly browned, about 1 to 2 minutes.
