Grain-free Banana Bread


3 ripe bananas, mashed
8 eggs
1/2 c. milk
1/4 c. honey
1/2 tsp. almond extract
3/4 c. coconut flour
1 tsp. baking powder
1/2 tsp. salt
1 1/2 oz. unsweetened baker’s chocolate
15 drops vanilla stevia


In a large bowl, beat eggs with bananas, milk, honey and almond extract. Stir together dry ingredients in a separate bowl, breaking up any lumps, and add to egg mixture until well combined. Finely chop chocolate and stevia in a small food processor and stir into batter, then pour into a large, well-greased loaf pan. Bake at 350 for about an hour, until set and a toothpick comes out clean. Let cool in pan about 10 minutes, then transfer to wire rack to cool completely before slicing.
