Holiday Eggnog

An easy and wonderful, non-alcoholic holiday treat.

Ingredients

4 organic, free-range eggs
1/4 cup honey, preferrably raw
2 cups organic half and half or coconut milk*
1/4 tsp cinnamon
1/4 tsp nutmeg
1 tsp. vanilla extract
1 cup organic vanilla ice cream, softened*
freshly grated nutmeg for garnish*

No of Servings: 6     Preparation Time: 15 minutes

Instructions

In a large bowl, whisk eggs with wire wisk or electric beaters. Whisk in honey until mixture is smooth and blended. Whisk in half and half or cocounut milk and then add spices and vanilla extract. Then gradually stir in softened ice cream until mixture is combined. Chill mixture and either serve in a punch bowl or in individual pretty glasses. Grate the top with freshly grated nutmeg.

Notes

The eggnog does not taste like coconut when using coconut milk. Julie’s is a brand of organic ice cream that can be used for special occasions. Freshly grated nutmeg offers wonderful flavor. Look for fresh nutmeg in a well stocked health food store or specialty store. Grate with a nutmeg grater or a fine mesh all-purpose grater.
