
Hummus is a Greek dip or spread made with chickpeas (garbanzo beans), sesame tahini, lemon juice, and garlic.
Ingredients
1 15 oz can garbanzo beans
2 cloves garlic
1/4 cup olive oil
1/4 cup tahini
3 tbs. lemon juice
2 tbs. bean liquid
1/2 tsp. sea salt
1/4 tsp. paprika
pinch cayenne
2 tbs. fresh parsley
No of Servings: 8 Preparation Time: 20 minutes
Instructions
Drain the garbanzo beans, saving at least 2 tablespoons of the bean liquid. Place all of the ingredients in food processor bowl. Puree until smooth or desired consistency. More salt, lemon juice or bean liquid can be added as desired. Place in a pretty bowl. Sprinkle the top with more paprika and garnish with more fresh parsley. Serve with fresh vegetables such as colored peppers, baby carrots, celery, cauliflower, and cucumbers. Can also be served with pita bread wedges.
Notes
I use organic garbanzo beans. Tahini is made from ground sesame seeds and is similar to peanut butter in texture. It’s found in the natural foods section along with peanut butter and almond butter. Fresh lemon juice can be used. I also use organic lemon juice in a glass bottle made by Santa Cruz.
