
An easy, no frills side dish that goes nicely with poultry or fish.
Ingredients
3 medium organic sweet potatoes
2 medium organic apples
1/2 cup chopped nuts (walnuts or pecans)
1 tbs fresh lemon juice
1/2 cup dried cranberries or raisins
2 tbs butter + butter to grease casserole dish
1/4 cup pure maple syrup
1/4 cup water
1/2 tsp cinnamon

Instructions
Wash and peel sweet potatoes. Slice in food processor or by hand into approximately 1/8 inch slices. Wash and slice apples. (If organic apples or used, there’s no need to peel them.) Butter a 13 inch by 9 inch casserole dish. Layer sweet potato and apple slices into dish. Sprinkle lemon juice over top. Then spread dried cranberries and nuts over top. Next, drizzle maple syrup on top of that. Add water along sides of casserole dish. Cut the 2 tbs butter into small pats and spread over top. Lastly, sprinkle cinnamon on top of casserole. Bake at 350 degrees for an hour or until potatoes and apples are soft.
