Minestrone Soup

A common soup enjoyed by all and easy to make.


2 tbs coconut oil
1 medium onion, chopped
4 cloves garlic, minced
2 stalks celery, chopped
2 medium carrots, chopped
1 cup red pepper, chopped
1, 28 oz can organic tomato puree
1, 15 oz. can organic white kidney beans (or navy beans) (drained)
1, 15 oz can garbanzo beans, (drained)
3 cups organic chicken broth
1 medium zucchini, chopped
1 tsp basil
1 tsp sea salt
1/2 tsp oregano
1/2 tsp marjoram
1/8 tsp cayenne pepper
1/2 cup organic, whole grain pasta, dry
1/2 cup chopped fresh parsley
freshly grated Parmesan or Romano cheese

No of Servings: 8     Preparation Time: 30 minutes     Cooking Time: 45 minutes


Saute onions and garlic in coconut oil until soft. Add carrots, celery and red pepper. Saute until soft. Add tomato puree, chicken broth, drained beans, zucchini, salt and herbs. Simmer for about 20 minutes until vegetables are soft. Add dry pasta and parsley and simmer for 10 to 15 minutes more or until pasta is done. Serve in bowls and garnish with freshly grated cheese. Add more cayenne or salt to taste.
