Orange Maple Glazed Squash

An easy yet lovely use for winter squash that goes nicely with any meat or poultry dish


1 medium to large butternut squash
1/4 cup pure maple syrup
1/4 cup butter
juice and rind of 1/2 organic orange
pinch of sea salt

No of Servings: 4     Preparation Time: 30 minutes     Cooking Time: 60 minutes


Wash squash. With a long, sharp knife cut squash in half, lengthwise. Scoop out seeds of each half. With patience and a sharp knife, peel each half. Cut each piece again in half, lengthwise. (You’ll have 4 lengthwise squash pieces.) Lay squash pieces in a buttered glass casserole dish with cut side up. Melt butter in small saucepan. Add maple syrup and salt and heat until mixture is warm and combined. Remove from heat and stir in juice and rind from one half of an organic orange. Gently spoon mixture over squash. Cover casserole dish. (I use a stainless steel cookie sheet if I don’t have a lid for the casserole dish.) Bake at 350 degrees for 45 minutes. Remove lid. Baste squash with sauce. Bake for 10 to 15 more minutes (uncovered) or until squash is soft. Spoon sauce over each piece when ready to serve.
