Spinach Casserole

A quick, “green” dish that even picky eaters will enjoy.


2 pkgs. chopped frozen spinach, thawed and drained
3 eggs
1 cup cottage cheese
1 cup grated cheese (mild cheddar), divided
3 tbs. melted butter
pinch cayenne pepper
1/8 tsp. nutmeg
1/2 tsp. Herbamare
1/8 tsp. paprika

No of Servings: 6     Preparation Time: 20 minutes     Cooking Time: 60 minutes


Beat eggs, add cottage cheese, 1/2 cup grated cheese and melted butter. Stir in spinach, cayenne, nutmeg and Herbamare. Spoon into buttered casserole dish. Spread remaining 1/2 cup chese over top. Sprinkle with paprika. Bake at 350 degrees for 1 hour or until set.


I use organic frozen spinach, organic cottage cheese and organic, free range eggs.
