Sweet Potato Royale

A yummy sweet potato dish that goes well with meatloaf.


4 cups cooked, mashed sweet potatoes
5 tbs butter, melted
2/3 cup coconut milk or cream
3 eggs, beaten
1/3 cup Sucanat
1 tsp cinnamon
1/2 tsp nutmeg
1 tsp vanilla extract
pinch sea salt
3 tbs butter
1/2 cup maple syrup
1/4 cup coconut milk or cream
1 cup chopped pecans or walnuts

No of Servings: 8     Preparation Time: 30 minutes     Cooking Time: 60 minutes


Mix all ingredients for casserole together until smooth, blending by hand or using an electric mixer. Pour into buttered baking dish. Bake at 350 degrees for 35 minutes. Meanwhile, make topping. Using topping ingredients, place butter, maple syrup and coconut milk in small saucepan. Bring to boil and boil for 6 minutes stirring constantly with whisk or spoon. Remove from heat and stir in chopped nuts. Pour over top of hot casserole and return to oven. Bake 15 to 20 more minutes until topping is lightly browned.
