Taco Soup

A quick and easy soup to make on a busy and chilly day.

Ingredients

1 lb. antibiotic and hormone-free ground turkey or beef
1 medium onion, chopped
1 red pepper, chopped
1 can diced green chiles
1 can organic black beans, undrained
1 can organic pinto beans, undrained
2, 14 ounce cans organic diced tomatoes
1/2 package organic frozen corn
1 tsp red pepper flakes
1/2 tsp oregano
3 tsp ground cumin
3 tsp chili powder
1 to 2 tsp sea salt

Instructions

Brown meat in dutch oven or soup pot. Add chopped onion and cook until onion is soft. Add chopped red pepper and herbs, seasonings and salt. Stir until blended and cook until bubbly. Then add green chiles, undrained beans, tomatoes and corn. Simmer for 15 to 20 minutes.  Serve in bowls along with grated cheese, sour cream and fresh cilantro.

Notes

Instead of buying packaged taco seasoning, I just add the spices and herbs directly to the soup as most taco seasoning packages contain MSG and other artificial ingredients.
