Ingredients
10 eggs
4-8 oz. diced green chiles
2-3 c. grated cheddar cheese
2 c. sour cream
1/2 c. arrowroot
1 tsp. baking powder
1 tsp. salt
1/2 c. butter
Instructions
Place butter in a 9×13 pan, turn oven to 350, and place pan in the oven to melt butter as it preheats. Whisk eggs with remaining ingredients, then slowly drizzle in the melted butter. Pour mixture into pan and bake for about 30 minutes.
Notes
This is wonderful served warm, or for a great grain-free appetizer, chill and cut into small squares.
