Three Bean Salad

One of the many versions of Three Bean Salad that is always at hit at picnics.

Ingredients

1 1/2 cups fresh or frozen green beans
1 can organic garbanzo beans
1 can organic pinto beans (or kidney beans)
1 medium green pepper, chopped
2 stalks celery, chopped
1/4 cup red onion, chopped
1 clove garlic, minced
1/3 cup organic apple cider vinegar
1/4 cup honey (raw is best)
2 tsp Tamari *
pinch cayenne pepper
1/4 cup olive oil

No of Servings: 6     Preparation Time: 20 minutes

Instructions

Lightly steam green beans until crisp tender. Chop green pepper, celery and onion in food processor. Mince garlic clove. Drain canned beans and place in large bowl. Add steamed green beans, chopped vegetables and garlic. To make dressing, pour vinegar into small bowl. Add Tamari, honey and cayenne and stir together. Using a wire whisk, whisk in olive oil while slowly pour oil into other liquid ingredients. Whisk together until smooth and combined. Pour dressing over top of vegetables and stir to combine. Chill before serving.

Notes

Tamari is a healthy form of soy sauce without added colorings and MSG. It is found in the health food section along with other condiments.
