No of Servings: 8     Preparation Time: 60 minutes     Cooking Time: 15 minutes

With electric beaters or wire whisk, whip cream to soft peaks. Refrigerate. In the top of a double boiler, place chocolate, honey, butter and coconut oil. Place this over bottom of double boiler containing lightly simmering water. Gently heat until chocolate is melted and mixture in smooth and creamy using a wire whisk to stir. Remove from heat. Whisk in vanilla extract. Separate eggs placing egg whites in a clean, dry bowl. Gradually add egg yolks, one at a time to chocolate mixture beating after each addition. Beat egg whites until soft peaks form. Gently fold whipped cream into chocolate mixture. Then fold in beaten egg whites until mixture is combined. Gently spoon into individual serving dishes and refrigerate for several hours. When ready to serve, garnish with extra whipped cream and/or mint leaves and fresh raspberries if desired.

When whipping cream, chill bowl and beaters for best results. For best results when beating egg whites, have whites at room temperature and make certain that beaters are clean and dry. Sunspire makes organic chocolate chips, both semi-sweet and bittersweet. They also make grain-sweetened chocolate chips.
