White Bean Dip

Sharon's Healthy Recipes

A healthy but different spread to use with whole grain crackers, sourdough bread or pita chips.

2 tbs coconut oil
1 clove, garlic minced
2 tbs red onion, minced
1/2 cup walnuts
1 can great northern beans, rinsed and drained
2 tbs fresh lemon juice
1 tbs tamari
2 tbs olive oil
1/2 tsp rosemary
1/8 tsp cayenne pepper

Heat coconut oil in small skillet. Saute minced garlic and onion in oil until soft. Add walnuts and heat slightly until warm and fragrant. Add drained beans and toss until beans are warm. Remove from heat. Place mixture in food processor bowl. Add lemon juice and tamari. Process until beans are smooth. Add rosemary, cayenne pepper and olive oil and blend until combined. Place in pretty bowl and garnish with rosemary. Serve with whole grain crackers, pita chips or sourdough bread.

Although this spread isn’t bright in color to the eye, it is a delectable flavor to the taste buds.
