Wholesome Waldorf Salad

Waldorf Salad is a classic salad that goes well with soups, meat or chicken dishes. Enjoy it often, especially when the new apple season comes in the fall

Ingredients

3-4 cups chopped apples
1 tbs. lemon juice
1/2 cup chopped celery
1/2 cup chopped walnuts
1/2 cup organic raisins
1/2 cup Vegenaise
1/4 cup plain or vanilla yogurt
1/4 tsp. cinnamon

No of Servings: 6     Preparation Time: 20 minutes

Instructions

Coarsely chop apples, sprinkle lemon juice on top of apples and stir in. Add remaining ingredients and mix together. Chill and serve on lettuce if desired.

Notes

Vegenaise is found in the refrigerated section in the health food store or your local grocery store. The brand is Follow Your Heart. I use the one with a purple lid and label. I recommend organic, whole milk yogurt, either plain or vanilla.
